The winemaking process for the 2019 Collector's Cabernet Sauvignon is a testament to our commitment to quality. On October 11th, the specific block of Clone 2 Cabernet Sauvignon was carefully harvested from the estate vineyard. The grapes were gently crushed and gravity-fed into a small stainless-steel, temperature-controlled tank. Following a three-day cold soak, daily pump-overs were performed to achieve the desired flavors and extraction. After 10 days on skins, the wine was drained to finish the barrel's primary fermentation and malolactic fermentation. After secondary fermentation, the wines were racked to 100% new French oak and aged 20 months before bottling.
